Tomato and basil pasta sauce. Quick and easy recipe.

The meatballs version

Simple. Cost-effective. Tasty.

Both Ratty and I have a busy lifestyle and work very long hours. This is the kind of stuff I make when I have to squeeze a healthy dinner between two 12-hour early shifts!
In my book, there is absolutely no excuse to eat ready meals. These are barred in our house!

 A few years ago I was watching Jamie Oliver's 30 minute meals programme and the recipe for this sauce came on. Easy to remember, ingredients readily available in the kitchen cupboard. Like he says, pukka.

Of course this is from memory and just so you know, the tomato purée came as an extra to thicken the sauce. I don't always use it but find that it adds some extra flavour and substance.

All you need are these ingredients below:

Easy, peasy!


For 2 people

- 1 tin chopped tomatoes
- 1 or 2 garlic cloves, finely chopped
- A small squirt of tomato purée
- 1 red chilli (optional), with seeds, finely chopped
- 1 tbsp extra virgin olive oil
- Large handful of fresh basil
- salt, pepper, to taste

Method:

- Heat oil in the pan in moderate heat
- Add the garlic and chilli (if used) and fry for about 20 seconds, stirring continuously so that they do not burn.
- Pour the tinned tomatoes and add the purée
- Lower the heat to a simmer and add the basil. Season with salt and pepper. Stir well.
- Simmer for 10 minutes

Once the pasta is cooked (make sure it it well drained!), place it on a place and add the sauce on top. Drizzle some olive oil and sprinkle freshly grated Parmesan on top.

That's an easy dinner sorted!
